The 'Postman Interceptor' is an Edge add-on designed to work as a companion to the Postman desktop app. It allows for the capturing of network requests and cookies directly from the Edge browser. This tool enables users to start debug sessions where they can monitor and log traffic. These sessions can be paused, stopped, and restarted, with the ability to save the collected data into a Postman collection and save cookies to the Postman cookie jar.

Postman may occasionally break and require a complete uninstall and re-install plus removing and re-adding interceptor before cookies can be synced with interceptor again, but it's all worth it in the end.
